Super-Delicious Zuppa Toscana

This is an oh-so-good recipe. Just the right amount of spice to make you take a cold drink but definitely keep coming back for more! This soup is irresistible!

Super-Delicious Zuppa Toscana

Yield: 6 servings

Ingredients: 1 pound bulk mild Italian sausage1 1/4 teaspoons crushed red pepper flakes4 slices bacon, cut into 1/2 inch pieces1 large onion, diced1 tablespoon minced garlic5 (13.75 ounce) cans chicken broth6 potato, thinly sliced1 cup heavy cream1/4 bunch fresh spinach, tough stems removed
Directions Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Ingredients: 4 skinless, boneless chicken breast halves - cubed1/8 cup margarine1 (.7 ounce) package dry Italian-style salad dressing mix1 (8 ounce) package cream cheese1 (10.75 ounce) can condensed cream of chicken soup
Directions Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.

Japanese Zucchini and Onions

Zucchini and onions are stir fried with sesame seeds and teriyaki and soy sauces.

Yield: 4 servings

Ingredients: 2 tablespoons vegetable oil1 medium onion, thinly sliced2 medium zucchinis, cut into thin strips2 tablespoons teriyaki sauce1 tablespoon soy sauce1 tablespoon toasted sesame seedsground black pepper
Directions Warm the oil in a large skillet over medium heat. Stir in onions, and cook 5 minutes. Add zucchini, and cook, stirring, about 1 minute. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini are tender, about 5 minutes. Stir in ground pepper, and serve immediately.

Key Lime Pie

This recipe uses condensed milk and sour cream. Fabulously easy. . . a summertime favorite! If you have time, a homemade graham cracker crust is better! Garnish with whipped cream and thin slices of lime if you like.

Yield: 1 pie

Ingredients: 1 (9 inch) prepared graham cracker crust3 cups sweetened condensed milk1/2 cup sour cream3/4 cup key lime juice1 tablespoon grated lime zest
Directions: Preheat oven to 350 degrees F (175 degrees C).In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust.Bake in preheated oven for 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.

Awesome Pasta Salad

This is the best pasta salad I've ever eaten, and people request it frequently. It's a very easy, light side dish for a picnic or dinner.

Ingredients: 1 (16 ounce) package fusilli (spiral) pasta3 cups cherry tomatoes, halved1/2 pound provolone cheese, cubed1/2 pound salami, cubed1/4 pound sliced pepperoni, cut in half1 large green bell pepper, cut into 1 inch pieces1 (10 ounce) can black olives, drained1 (4 ounce) jar pimentos, drained1 (8 ounce) bottle Italian salad dressing
Directions: Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and rinse with cold water.In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives, and pimentos. Pour in salad dressing, and toss to coat.

Wrap each mushroom with a half-slice of bacon, and secure with toothpicks. Place on a baking sheet.Bake for 20 minutes in the preheated oven, until the bacon is cooked through.

One really delicious and really unhealthy Sunday coffee cake. I have no idea where I got this recipe from but it was about thirty years ago and has been a family favorite since. The bake time is a bit longer if you're using frozen berries.

This is a super-easy weeknight recipe with Mexican flair. Server with Spanish rice, refried beans, and warm tortillas!

Green Chili and Cheese Chicken

Yield: 4 servings


Ingredients: 4 boneless, skinless chicken breasts1 1/2 cups shredded pepperjack cheese1 (4 ounce) can diced green chile peppers, drained1 tablespoon dry fajita seasoning
Directions: Preheat the oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish (or similar size) with cooking spray.Make a deep cut into the side of each chicken breast half to form a pocket or 'purse'. Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each one. Close, and secure with a toothpick so that the cheese does not escape while in the oven. Place the stuffed chicken into the baking dish. Season with Fajita seasoning, and then sprinkle the remaining cheese and chilies over the top.Bake uncovered for 30 minutes in the preheated oven, until the chicken juices run clear, and cheese is melted and lightly browned.

This French toast recipe is different because it uses flour. I have given it to some friends and they've all liked it better than the French toast they usually make!

Yield: 12 slices
Ingredients: 1/4 cup all-purpose flour1 cup milk1 pinch salt3 eggs1/2 teaspoon ground cinnamon1 teaspoon vanilla extract1 tablespoon white sugar12 thick slices bread
Directions: Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.Heat a lightly oiled griddle or frying pan over medium heat.Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Directions: Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 9 inch springform pan.In a small bowl, mix together brownie mix, 1 egg and water. Spread into the greased pan. Bake for 25 minutes.Melt the caramels with the evaporated milk over low heat in a heavy saucepan. Stir often, and heat until mixture has a smooth consistency. Ingredients:
1/4 cup cider vinegar3 tablespoons prepared coarse-ground mustard3 cloves garlic, peeled and minced1 lime, juiced1/2 lemon, juiced1/2 cup brown sugar1 1/2 teaspoons saltground black pepper to taste6 tablespoons olive oil6 skinless, boneless chicken breast halves
Directions:
In a large glass bowl, mix the cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, salt, and pepper. Whisk in the olive oil. Place chicken in the mixture. Cover, and marinate 8 hours, or overnight.Preheat an outdoor grill for high heat.Lightly oil the grill grate. Place chicken on the prepared grill, and cook 6 to 8 minutes per side, until juices run clear. Discard marinade.

I always found turkey meatloaf to be quite disappointing. The flavor is usually lacking as well as the texture. Well, I have developed this version that has a great texture and a surprisingly good flavor (my brother couldn't even tell that it wasn't beef)! The secret is the quinoa, which adds wonderful texture and is much nuttier than breadcrumbs. I hope you enjoy this recipe!

Ingredients: 1 (19.8 ounce) package brownie mix1 (3.9 ounce) package instant chocolate pudding mix1/2 cup water1 (14 ounce) can sweetened condensed milk1 (8 ounce) container frozen whipped topping, thawed1 (12 ounce) container frozen whipped topping, thawed1 (1.5 ounce) bar chocolate candyDirections: Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

Ingredients: 1/2 cup packed brown sugar1/2 cup ketchup1 1/2 pounds lean ground beef3/4 cup milk2 eggs1 1/2 teaspoons salt1/4 teaspoon ground black pepper1 small onion, chopped1/4 teaspoon ground ginger3/4 cup finely crushed saltine cracker crumbs
Directions: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.Bake in preheated oven for 1 hour or until juices are clear.

Directions: In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice.

Ingredients: 3/4 cup uncooked white rice2 cups milk, divided1/3 cup white sugar1/4 teaspoon salt1 egg, beaten2/3 cup golden raisins1 tablespoon butter1/2 teaspoon vanilla extract
Directions: Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

Yield: 8 servings

Ingredients: 1 tablespoon butter3/4 cup almonds, blanched and slivered1 pound spinach, rinsed and torn into bite-size pieces1 cup dried cranberries2 tablespoons toasted sesame seeds1 tablespoon poppy seeds1/2 cup white sugar2 teaspoons minced onion1/4 teaspoon paprika1/4 cup white wine vinegar1/4 cup cider vinegar1/2 cup vegetable oil
Directions: In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.In a large bowl, combine the spinach with the toasted almonds and cranberries.

Ingredients: 2 teaspoons olive oil3 tablespoons finely chopped onion1 (15.5 ounce) can black beans, drained and rinsed1 (10 ounce) can whole kernel corn, drained1 tablespoon brown sugar1/4 cup salsa1/4 teaspoon red pepper flakes2 tablespoons butter, divided8 (8 inch) flour tortillas1 1/2 cups shredded Monterey Jack cheese, divided
Directions: Heat oil in a large saucepan over medium heat. Stir in onion, and cook until softened, about 2 minutes. Stir in beans and corn, then add sugar, salsa, and pepper flakes; mix well. Cook until heated through, about 3 minutes.Melt 2 teaspoons of the butter in a large skillet over medium heat. This makes a sandwich similar to one I used to get at a local restaurant when I lived in a suburb of Chicago. My all time favorite! Serve on crusty rolls with roasted sweet or hot peppers, if desired.

Ingrdients:
1-1/2 cups water1/2 teaspoon salt1/2 teaspoon ground black pepper1/2 teaspoon dried oregano1/2 teaspoon dried basil1/2 teaspoon onion salt1/2 teaspoon dried parsley1/2 teaspoon garlic powder1/2 bay leaf1/2 (.7 ounce) package dry Italian-style salad dressing mix1/2 (5 pound) rump roast
Directions:
Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.Place roast in slow cooker, and pour salad dressing mixture over the meat.Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

Sometimes when you eat authentic Mexican food, they give you this salsa stuff made with tomatoes, onions, and jalapenos. You can add a squeeze of lime juice to pico de gallo, but I prefer this basic recipe. Once you serve this with your Mexican dish such as tacos, you will want it with all your Mexican dishes!

Ingredients: 1 medium tomato, diced1 onion, finely chopped1/2 fresh jalapeno pepper, seeded and chopped2 sprigs fresh cilantro, finely chopped1 green onion, finely chopped1/2 teaspoon garlic powder1/8 teaspoon salt1/8 teaspoon pepper
Directions: In a medium bowl, combine tomato, onion, jalapeno pepper (to taste,) cilantro and green onion. Season with garlic powder, salt and pepper. Stir until evenly distributed. Refrigerate for 30 minutes.

This is a spicier version of spinach stuffed chicken breasts. They are both tender and delicious, and they look good too.

Ingredients: 1 (10 ounce) package fresh spinach leaves1/2 cup sour cream1/2 cup shredded pepperjack cheese4 cloves garlic, minced4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness1 pinch ground black pepper8 slices bacon
Directions: Preheat the oven to 375 degrees F (190 degrees C).Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Yield: 1 - 9x5 inch loaf

Ingredients: 1/2 cup butter, melted1 cup white sugar2 eggs1 teaspoon vanilla extract1 1/2 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon salt1/2 cup sour cream1/2 cup chopped walnuts2 medium bananas, sliced
Directions: Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

Directions: In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. In a blender, combine the minced onion, peanut oil, rice vinegar, water, ginger, celery, ketchup, soy sauce, sugar, lemon juice, garlic, salt and pepper . Blend on high speed for about 30 seconds or until all of the ingredients are well-pureed.

I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

Directions: In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.Bake 6 to 8 minutes in preheated oven. Cool completely.

Directions:
In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

Directions: Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.Press one can of the crescent rolls into the bottom of the prepared pan. In a medium bowl, mix together the cream cheese, 1 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. Combine the remaining 1/4 cup of sugar and cinnamon; sprinkle over the top.Bake for 25 to 30 minutes in the preheated oven, or until the top is crisp and golden.

Directions:
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Directions: Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.In a large bowl mix together cake mix and pudding mix. Make a well in the center and pour in eggs, water, oil, almond extract and green food coloring. Blend ingredients, then beat for 2 minutes at medium speed.Pour into prepared 10 inch tube pan. Bake in the preheated oven for 50 to 55 minutes, or until cake springs back when lightly pressed. Cool in pan 15 minutes. Turn out onto a wire rack and cool completely.
